At first consumers were doubtful about eating these fish with poisonous spines. But the idea has caught on as conservation organizations and the state government have worked to clear up the doubt and teach how to remove spines. There's a large market at this point. Conservationists have considered eating other invasive species to reduce their numbers, too. But things like the Asian carp have been a harder sell. As the lionfish story becomes widely known, it might help open the door to building similar programs around other invaders—the tasty ones, at least.
The goal behind this approach might sound unreasonable to managers of fish farms.
